






HYDRATING WATERMELON SALAD
Serves 2
- 1 pound watermelon flesh, cut into chunks
- 1 bunch mint leaves, larger leaves torn
- 1 handful watercress
- 1 handful pomegranate seeds
- 1 tablespoon extra-virgin olive oil 2 teaspoons flaxseeds
Directions: Toss the watermelon, mint and watercress in a bowl. Serve drizzled with oil and sprinkled with flaxseeds and pomegranate seeds.
